Roasted Veggie Quinoa Bowls with Tomato Vinaigrette

I’ll be honest with you, I’m not a huge quinoa fan. I’ve tried making it many ways and it’s just so bland. I’ve cooked in veggie stock and chicken stock and still find it very blah. So lately I’ve just been mixing it in with roasted vegetables and it’s so much better. I add a little homemade tomato vinaigrette to give it an extra pop and lunch is served.

  • I started with cooking the quinoa per the directions on the package and then setting it aside.
  • Roast any veggies you choose. I chose brussel sprouts, butternut squash, and sweet potato.
  • Toss together and mix in vinaigrette.

Tomato Viniagrette

2 tsp apple cider vinegar

1 tbsp tomato paste

2 tbsp olive oil

1/4 tsp garlic powder

Salt and pepper

To make it a bit Tex-Mex add some chili powder to the vinaigrette and put black beans and grilled corn into your quinoa bowl. Seriously yummy!
