Breakfast Obsession

Alright, I need to share my breakfast obsession. For starters, if you’re not on the brussels sprout wagon yet, get on it. As a kid I wouldn’t even think of eating a brussels sprout. No way! I then tried them out of frozen box as an adult. Gag.

I was feeling brave one night and gave them another try. Fresh. Sliced and roasted. I’m in love. I must make roasted brussels sprouts two to three times a week. A little olive oil and some salt and pepper…voila!  I love when I have leftovers so I can make my new favorite breakfast.

First I shred my leftover brussels and toss them in the frying pan to warm them up. I then add in some black beans or whatever I have in the fridge at the time. I scramble up an egg and add in. A little hot sauce and I’m in heaven.

  1. This looks delicious! I’ve just recently started roasting these and I too am in love, I’ve done it twice this week! Olive oil, garlic salt and some toasted pine nuts – yum! The other day I also added in some crispy bacon for my 12 year old, he tried two pieces and thought it was ‘okay’, he’s not quite on the bandwagon yet but I’m trying!

  2. Mmmmm . . . I’ll have to try this. Totally agree with the whole kid-yuck/adult-yum factor! Actually had that discussion with my nine year-old just the other day. Glad I discovered roasted brussels sprouts!

  3. Roasted Brussels sprouts are so good.

    I made some mashed garlic cauliflower for dinner tonight and it was incredible. Not sure that I’ll put that in my eggs yet though. HAHAHA…
