Sweet Potato Hash Browns

I had a serious craving for hash browns the other day thanks to The Life of J-Wo’s post on the subject. However, in attempts to eating cleaner and healthier I tried to ignore the craving. You know how it goes…that craving does not go away until it has been fulfilled.

This got me thinking of healthier alternatives to your traditional hash browns. Sweet potatoes! I wondered if they would even taste good. What does one do? They Google. I found that sweet potato hash browns are actually a thing. So that night I decided to give them a whirl.

I’m a wing it girl so I just put together what I thought would taste good.

First I peeled and shredded my sweet potato. Remind me to invest in a food processor that has a shredding blade. I then seasoned the shredded sweet potatoes with salt, pepper, garlic powder, and a little bit of paprika. I tossed it all and set it aside.

In the frying pan I heated up about a couple of tablespoons of olive oil and then sautéed some diced red onions until they were soft. I then added my sweet potatoes. Tossing them around the pan for while until they were soft and cooked through. Honestly, I don’t think you can screw them up…just don’t burn them.

Wow. They were amazing. Even my husband liked them. And they totally satisfied my hash brown fix I had been craving. I found a winner.

    But those look and sound amazing. I’ve been making more Paleo-friendly meals so sweet potatoes are part of the equation. I’ve just tried baking chips so far though, but it looks like I need to get me a shredder. Hmmm…
