We were snowed in again this weekend. What tends to happen when I’m trapped inside is that I hide in the kitchen so I can get a little bit of space. I cook and bake, sometimes I let the kids help. It’s just comforting to me. Saturday I made kale soup, blueberry scones, roasted chicken, and these awesome sweet potato hash cups. They were so yummy. Sweet potato hash is one of my favorite things to whip up, but putting it into a little bacon cup was AWESOME. I mean you can’t go wrong with adding bacon, right?
Yields 6 cups.
Ingredients:
- 6 strips of bacon, cut in half
- 1 large sweet potato shredded
- 1/4 red onion diced
- 1 tbsp. olive oil
- garlic powder, salt & pepper
First pre-heat the oven to 425 degrees
Line each cup with bacon.
Put together the filling; shredded sweet potato, red onion, olive oil, and season with garlic powder and salt& pepper.
Fill the cups. Add a bit of water to remaining empty cups.
I wasn’t too sure how they would come out, but OMG. They were so full of flavor! Great if you’re expecting friends for brunch. Try them and tell me what you think.
