Dinner For One: Sweet Potato & Brussel Sprouts Saute

The majority of the week we have “family dinner.” Aside from Thursday night, when the kids have Scouts. I usually serve them up a grilled cheese and worry about my husband and myself later. Now family dinner is ALWAYS a challenge. I have to figure out something everyone will like, not just the kids, my husband included. It’s a balancing act actually. All four of those boys like different things. I sometimes serve two different veggies, knowing one kid (or adult kid) will absolutely NOT eat asparagus or frozen corn. Even on nights where I just make something for the kids, making something for both my husband and I is a pain. See, I have a more extended palette. I ENJOY healthy foods that he turns his nose up to. So when the rare opportunity arises where I just get to make dinner for MYSELF, I LOVE IT!!

Last night, while my husband had leftovers and my kids had soup I did a workout and then made MYSELF dinner. It was delicious!

I shredded up a sweet potato and some brussel sprouts, and added some finely diced red onion, salt, pepper, and a little garlic powder. I tossed it in the saute pan with some olive oil and let it cook till it began to brown up. I served it with a over-easy egg.

YUM! Protein and veggies. It was the perfect after-workout dinner. So easy and no one whining in my ear about the green stuff.

  1. I can so relate! My large man child will actually eat anything, except for mint or coconut. Pretty easy. The girls are super picky. If I’m by myself, I’ll opt for light popcorn and some Cabernet! 😉 TIRED! DONE!
