Greek Inspired Chicken Thighs

Do you ever get in that rut where you feel like you’re making the same dinners over and over again? It happens to me all the time. I decided to change it up this weekend. My boys love skinless, boneless chicken thighs, and I typically make them the same way every single time. It’s always a win, but honestly, I’m tired of them. I switched it up and hoped for the best. Greek Inspired Chicken Thighs. The boys like olives and spinach so I went with that.

Preheat the oven to 425°F

Season the skinless, boneless thighs with onion powder, garlic powder, and salt & pepper.

Place them in a baking dish and drizzle with some olive oil.

Top the chicken with 1 small can of petite diced tomatoes, a few handfuls of spinach, sliced olives, and feta cheese.

Bake for 25 minutes.

Such a simple and flavorful meal…and the boys and big boy actually LOVED it! Recipe is going into the arsenal.
