Shrimp & Scallop Boil Foil Packs

I’m clinging to last remaining weeks of Summer. We fired up the grill tonight for some delicious seafood with minimal effort. Here is a super easy summer recipe for you. Foil packs are the way to go. So easy. I love that I can customize them to what my kids like. Extra shrimp for one, no potatoes for another. I recommend you give this one a try while it’s still grilling season.

Ingredients (makes 4 packets)

1 lb of large raw shrimp (I peeled and deveined mine first)

1/2 lb of sea scallops (sliced in half)

4 red potatoes (chopped small)

2 ears of corn

1/2 lb kielbasa or chorizo

Old Bay seasoning

Olive oil

Butter

Parsley

 

Make sure to heat up your grill to medium/high heat. Cut up the corn, potatoes, and kielbasa and start assembling foil packets. Drizzle each with olive oil and sprinkle with Old Bay seasoning. Add a tab of butter to each pack and fold them up.

Grill for 10 minutes and they’re ready! All the tastes of Summer!
