Simple Herb Roasted Baby Potatoes

Looking for a simple side to put together for your Thanksgiving feast? These Herb Roasted Baby Potatoes  are full of flavor and so EASY to make.

Roasted Baby Potatoes
Ingredients

1.5 lbs. baby potatoes, quartered

2 sprigs of thyme

2 sage leaves

1 sprig of rosemary

2 tbsp olive oil

Directions

Simply preheat your oven to 425°F and line a baking sheet with tinfoil.

Quarter chop baby potatoes, trying to get a uniform size so they cook through at the same time.

Chop fresh herbs.

In a bowl toss together olive oil, fresh herbs, and potatoes.

Bake for 35 minutes.

They are nice and soft on the inside with some amazing and crispy flavor on the outside. Easy clean-up is also a big bonus in my book!
