I’m sharing a delicious gluten-free recipe over at Mom Generations this week. These GF Strawberry Shortcakes were delicious!! My kids absolutely loved them, and the hubby was just eating the shortcakes right off the baking sheet. They make the perfect little Valentine dessert! Recipe

Gluten-Free Strawberry Shortcake
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 6 shortcakes
Ingredients
- 1 ½ cups of gluten-free all-purpose flour
- 2 ½ tbsp sugar
- ¼ tsp salt
- 2 ¾ tsp baking powder
- ¾ cup heavy cream
- Strawberries
- Whipped cream
Instructions

Preheat the oven to 450°F

Mix the flour, baking powder, salt, and sugar together.

In a separate bowl, beat together the cream and egg.

Pour the wet ingredients into the dry ingredients and mix to form a cohesive dough.

Scoop the dough in 1 1/2-ounce balls onto a baking sheet lined with parchment paper and gently flatten each to about 2" to 2 1/2" diameter.

Bake for 10-12 minutes. Then let cool.

While shortcakes are cooling, cut up some strawberries and sprinkle them with some sugar and set aside.

Slice shortcakes and fill with strawberries and whipped cream.

Strawberry shaped heart garnish is a fun Valentine touch.
