Reuben-Style Nachos

Are you hosting a St. Patrick’s Day party this year? These Reuben-style Nachos are sure to be a hit. Now a typical Reuben sandwich is a grilled cheese using rye bread, with corned beef, Swiss cheese, sauerkraut, and a Russian or Thousand Island dressing.

A corned beef boiled dinner is a huge St. Patrick’s Day menu item. I’m not a fan of it. I can’t stand the smell of the boiled cabbage, so I thought I’d give it a twist and make it into nachos, using sauerkraut as my “cabbage.” They were delicious.
