It’s been raining for days!! I am so sick of the rain. I think it’s been 17 days out of 25 where we have had rain this April. It’s rather depressing. However, nothing beats soup on a rainy day. When I’m pressed for time on a week day I have no problem turning to canned soup. I just like to amp it up a little. Here are 20 ways you can amp up canned soup (and claim it as your own).
Tomato Soup
- Add 2 tbsp of cream, chopped fresh basil, and ground black pepper.
- Top with arugula, shaved pParmesan, and balsamic glaze.
- Add pesto and grated Parmesan.
- Sauté some shallots with a little Sherry wine, then stir into soup.
- Add 1 tsp of Thai red curry paste and some cooked rice.
- Add one finely chopped chipotle pepper in adobo sauce and some shredded chicken.
- Top with sliced jalapeños and shredded cheddar.
- Stir in 1 tbsp of sour cream and some chives and ground black pepper.
- Add 1 tsp soy sauce, some cooked rice noodles, and scallions.
- Add 1 tsp of red wine vinegar and melt on some Fontina cheese.
Butternut Squash soup
- Add sausage and sage.
- Mix in sautéed shallots and sour cream.
Chicken soup
- Add lemon and fresh dill.
- Add red pepper flakes and corn.
- Add in a handful of baby kale and tsp of hot sauce
Lentil soup
- Add fresh ginger and Greek yogurt.
- Add Thai red curry paste.
Clam Chowder
- Add Hot sauce and corn.
- Add fresh dill and cracked black pepper.
Cream of Chicken Soup
- Add shredded rotisseri chicken, fresh thyme, and frozen peas.
I like to added dipped grill cheese sandwich to my tomato soup. 😉
