Roasted Beets with Goat Cheese

 

So beets have become a newfound favorite for me this year. Don’t even think about those nasty canned things that taste like dirt, these taste nothing like dirt. They are sweet, delicious, and simple to make. Roasting them makes them perfectly tender on the inside with a bit of crunch on the outside.

Ingredients:

  • Fresh beets
  • Olive oil
  • Salt & Pepper
  • Goat cheese

Instructions:

  1. Preheat oven to 425°
  2. Line a cooking tray with aluminum foil.
  3. Peel and dice beet roots into small pieces.
  4. Drizzle with olive oil and sprinkle with coarse salt and pepper.
  5. Bake for 25 minutes.
  6. Serve with goat cheese.

 

 

 

Ridiculously easy to make and so good. Even my kids ate them, minus the goat cheese. However in my opinion the tangy goat cheese makes them taste so much better. If you prefer feta, that is another option.

Beets are full of nutrients. They are a great source of fiber, folate, potassium, iron, and vitamin C. Beets help improve blood flow and lower blood pressure. I encourage you to give them a try. They really are Delicious!!
