It’s a rare occasion that my husband and I go out to dinner together, just the two of us. Last spring we went to a new restaurant in town. I ordered salmon, because that’s just what a I always order when we go out. My husband surprised me by ordering a pasta dish. He NEVER orders a pasta dish, like ever. I don’t normally make them at home because he’s not too crazy about them. However, this one caught his attention: shrimp & penne in vodka sauce. He loved it. Raved about it. I figured this would be a really simple one to make at home so I gave it a whirl. It has now become one of my go-to quick meals that the entire family with eat. I figured I’d share it with you.
Now as I have said before, I’m not really a measuring kind of cook so I’ll do my best.
Quick & Easy: Shrimp and Pasta in Vodka Sauce
When it comes to vodka sauce I use a jarred sauce.
Ingredients:
olive oil
1 lb raw shrimp – what ever size you like
2 cloves of garlic
pasta
1 jar of vodka sauce
2 tlbs. of fresh parsley (chopped)
Get your pasta water boiling first. Cooking the shrimp will take the same about of time that it takes for the pasta to cook.
Heat up a large skillet and put in a little olive oil (2-turns around the pan). Once the pan/oil have heated up toss in the 2 cloves of chopped garlic. Add your shrimp to the pan. Again, it cooks quick, just a few minutes on each side.
Once the shrimp is cooked, add the vodka sauce to the shrimp and turn the heat down to a simmer.
Now take care of your pasta, it should be ready. Drain and add to the skillet. Add some fresh parsley and your done. Dinner in 20 minutes!
I also made some roasted brussels sprouts. Yum. I wish my kids would eat them, but I have give them credit for trying them.

My sister in law introduced me to Vodka sauce because I don’t like tomatoes and I have been smitten ever since! Isn’t it great?!

Yum! You are so smart to keep it simple. Bowtie pasta is always a hit with my kiddos too. Have you tried Orzo with them? We love that as well. Do you put anything special on your Brussels sprouts before roasting them?
I LOVE orzo!! Olive oil, balsamic vinegar, and salt & pepper…I’m addicted to them.
