Are you all still on your new year’s health kick? Here’s a great healthy banana nut muffin recipe for you to try. I found it a couple of years ago on PaleoGrubs and they were a hit in my house, even the kids LOVED them. They had been asking me to make them again. They’re great to whip up on a Sunday while meal prepping. Makes for an easy breakfast for all throughout the week. Guilt free. Go ahead and try them, you won’t be disappointed.
Ingredients:
• 4 bananas, mashed with a fork (the more ripe, the better)
• 4 eggs
• 1/2 cup almond butter
• 2 tbsp coconut oil, melted
• 1 tsp vanilla
• 1/2 cup coconut flour
• 2 tsp cinnamon
• 1/2 tsp nutmeg
• 1 tsp baking powder
• 1 tsp baking soda
• 1/4 tsp salt
- Preheat the oven to 350° and line your cupcake trays.
- Combine the wet ingredients: mashed bananas, eggs, almond butter, melted coconut oil, and vanilla.
- After the wet ingredients are combined, add your dry ingredients.
- Fill each cupcake tin about two-thirds. I added some walnuts to the top of mine.
- Bake for 20 minutes.
