Healthy Banana Nut Muffins

Healthy banana nut muffins that fit the paleo diet.

Ingredients

  • 4 bananas mashed with a fork (the more ripe, the better)
  • 4 eggs
  • 1/2 cup almond butter
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla
  • 1/2 cup coconut flour
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350° and line your cupcake trays.
  2. Combine the wet ingredients: mashed bananas, eggs, almond butter, melted coconut oil, and vanilla.
  3. After the wet ingredients are combined, add your dry ingredients.
  4. Fill each cupcake tin about two-thirds. I added some walnuts to the top of mine.
  5. Bake for 20 minutes.
