Shrimp Stir Fry with Lo Mein

I just wanted to share a quick and easy dinner recipe with you. Spring is usually really busy, and quick meals are a necessity. This recipe is perfect for the midweek rush because shrimp cooks up super fast and it’s loaded with veggie-based goodness.

Ingredients

1/3 of the 10oz package lo mein noodles

1/2 cup sliced mushrooms

1/2 bag of frozen cauliflower (already steamed)

1 cup snow peas

5oz can of sliced water chestnuts

1 pound medium shrimp

1/2 cup stir fry sauce

 

Prepare lo mein noodles and set aside. The lo mein noodle I get are divided into three bundles. For this recipe I used only one bundle.

Heat up a drizzle of olive oil a fry pan or wok and saute the mushrooms, cauliflower, and snow peas.

When the mushrooms have softened, add in the water chestnuts and shrimp. The shrimp only take a few minutes to cook.

Then add in the lo mein noodles and stir fry sauce. Stir so everything is coated, then serve.

I highly recommend you add this to your midweek arsenal. It quick and delicious! Feel free to add whatever you want. I like to add in orange or yellow peppers sometimes.
