Not Your Average Shepherd’s Pie

My husband and I decided to try making a Shepherd’s Pie using creamy garlic sweet potatoes instead of traditional potatoes and we were not disappointed. Even Grandma approved! I encourage you to give this one a try. I also added some bacon 😉 Who doesn’t love bacon?

Ingredients

2lbs lean ground beef

2 tsp onion powder

2 tsp garlic powder

salt & pepper

1 lb bacon (cooked)

2 cans of corn (drained)

3 medium sweet potatoes

1 lb baby red potatoes

3 cloves garlic

1/2 cup sour cream

1/2 stick of butter

salt & pepper

Instructions

  • Boil potatoes and garlic together.
  • Cook bacon (I prefer to bake it)
  • While potatoes cook, start on the beef mixture. Saute beef with seasoning. Set aside.
  • When potatoes are done, drain them and mash them with butter, sour cream, and salt & pepper.
  • Time to assemble! Preheat oven to 425° and spray dish with cooking spray. Layer beef, corn, bacon, and then potatoes.
  • Bake for 25 minutes or till when the potatoes start to brown.

Hope you enjoy this twist on a classic dish.
