Not Your Average Shepherd's Pie

Our own little twist on a classic dish.

Ingredients

  • 2 lbs lean ground beef
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • salt & pepper
  • 1 lb bacon cooked to crispy
  • 2 cans whole kernel corn

Mashed Potatoes

  • 3 medium sweet potatoes peeled and chopped
  • 1 lbs Baby red potatoes skin-on and quartered
  • 3 cloves garlic
  • 1/2 stick butter
  • 1/2 cup sour cream
  • salt & pepper

Instructions

  1. Start with boiling up the potatoes and garlic cloves together.

  2. Cook up the bacon. I prefer baking it. 

  3. While potatoes are boiling, work on beef mixture. Add beef and seasoning and saute until fully cooked. Set aside.

  4. When potatoes are done, drain and mash. Add in butter, sour cream, and salt & pepper to taste.

  5. Now you're ready to assemble. Preheat the oven to 425°F. Spray a 9 x 13 baking dish with cooking spray.

  6. Layer down the ground beef, then top with the corn, and then the bacon. Dollop on the potatoes and spread them across the top. 

  7. Bake for 25 minutes or until the potatoes begin to brown on top.
