Chickpea Pasta with Shrimp

Sometimes I just have to wing it and hope for the best. I didn’t really meal plan well this week. I had dinners planned and shopped for for Monday and Tuesday, but that is as far as I got. While I was driving home Wednesday night I was brainstorming. I knew that as soon as I walked through the door one of the four boys would be asking, “What’s for dinner?” before I could even take off my jacket. Crap. I knew I didn’t have any chicken, steak, or pork and the fish was frozen. I knew I had some shrimp in the freezer, and that cooks fast. Hmmm..

Cherry tomatoes…I knew those were running out of time, so was the half a container of spinach in the fridge. Oh, and I had just bought some chickpea pasta to try out. It was starting to come together on my 15 minute ride home.

“What’s for dinner?” they asked. “Just leave me alone and I’ll feed you soon. Out of my kitchen please!”

I started by heating up my new favorite pan and adding in cherry tomatoes and olives, with olive oil and lots of minced garlic. It was smelling AMAZING!!  I got my pasta water going for the chickpea pasta.

I prepared my shrimp while the tomatoes were cooking down. I waited until the pasta was nearly done before adding in the shrimp followed by the spinach. They cook quickly. I added in 3 tablespoons of butter and mixed it all with the pasta.

I crossed my fingers and placed it on the dining room table.

Apparently they liked it. DEVOURED!

Chickpea Pasta With Shrimp

Protein and veggie packed quick weeknight dinner.

Ingredients

  • 1 box chickpea pasta
  • 1 cup cherry tomatoes cut in half
  • 1/2 cup olives cut in half
  • 1 tbsp minced garlic
  • 2 tbsp olive oil
  • 1 lb shrimp tail-off
  • 2 cups spinach
  • 3 tbsp butter

Instructions

  1. Start boiling water for pasta

  2. In a large saute pan, warm up olive oil and add in cherry tomatoes and olives, along with the minced garlic. Season with salt and pepper. Cook for 7 minutes

  3. When pasta is almost ready, add the shrimp and spinach to the saute pan.

  4. Add butter to saute pan.

  5. Drain pasta and toss together.

  1. That looks really good! I have never heard of chickpea pasta. I will have to look for it the next time I am at the store.
