May is FINALLY here!! Can you believe it? I put together a SUPER EASY Cinco de Mayo recipe for you to pair up with your margaritas. What I love most about this recipe is that it is easy to clean up. One sheet pan, a knife, and a cutting board. That’s it! I’m always excited when I can find a ONE pot or ONE sheet pan meal that the entire family will enjoy. Happy Cinco de Mayo!!!
Ingredients
1lb Boneless chicken breast
2 bell peppers (your choosing)
1 large onion
1 packet fajita seasoning
Olive oil
Flour tortillas
Instructions
-
Turn on your broiler.
-
Line a baking sheet with aluminum foil for easy cleanup.
-
Slice the peppers and onions and place in bowl. Drizzle with a couple of tablespoons of olive oil and use half of the season packet to season the veggies.
-
Put veggies on two thirds of the baking sheet and put under broiler for 10 minutes.
-
While veggies are cooking, slice chicken into strips (you can do steak if you wish or both). Drizzle with olive oil and season with the rest of the packet.
-
Take pan out of the oven after the first 10 minutes and add the meat. Broil for another 8-10 minutes until the chicken is cooked through.
-
During the last minute or two of cooking, I like to place the tortillas on the bottom rack of the oven to warm them up before serving.
