I feel January is the time that everyone is scrambling to find healthy recipes that are both easy to make and actually filling. This Lentil Vegetable soup is just that. It is hearty and has great flavor. An added bonus, it’s vegetarian and you won’t even miss the meat. Lentils are one of the top protein-packed beans, and are also loaded with fiber which makes you feel full along with other great benefits. According to WebMD, “It can lower cholesterol and protect against diabetes and colon cancer. A daily dose of fiber pushes waste through your digestive system.”
Now lets get cooking.
Ingredients
3 medium carrots
3 celery stalks
1 shallot
tbsp olive oil
28oz crushed tomatoes
4 cups vegetable broth
1 cup water
8oz lentils
Seasoning: 1 tsp coriander, 1 tsp onion powder, 1/2 tsp paprika, 1/2tsp parsley, salt & pepper
Instructions
- Heat olive oil in large pot and sauté the vegetables until they start to get tender.
- Add in crushed tomatoes and seasoning.
- Add broth and water, and bring to a boil.
- Add in the lentils and turn heat to medium. Cover for 5 minutes.
- Uncover and simmer for 30 minutes, stirring occasionally.
This soup is really easy to put together, super healthy, and most importantly…it’s delicious! Even my husband approved. Hope you enjoy it!!

Ingredients
- 3 med Carrots
- 3 med Celery stalks
- 1 Shallot
- 1 tbsp Olive oil
- 28 oz Can of Crushed Tomatoes
- 4 cups Vegetable broth
- 1 cup water
- 8 oz Lentils (dry)
- 1 tsp Coriander
- 1 tsp Onion powder
- 1/2 tsp Paprika
- 1/2 tsp Parsley
- Salt & Pepper to taste
Instructions

In large soup pot, heat up olive oil and add in chopped carrots, celery, and shallot. Cook till softened.

Stir in crushed tomatoes

Add seasoning

Stir in broth and water and bring to a low boil.

Stir in lentils and cover for 5 minutes.

Remove cover, turn down heat, and let simmer for 30 minutes, stirring occasionally.
